Rice flour (also rice powder) is a type offlour made from finely milled rice. It differs from rice starch, which isusually produced by steeping rice in lye.
Riceflour is a verygood substitute for wheat flour, which irritates the digestive systems of thosewho are gluten intolerant. Rice flour is also used as a thickening agentin refrigerated or frozen recipes since it prevents liquid separation.
