I do something similar with the cherries, but I do not use any chocolate I use a special organic chocolate product to make cherries with chocolate I let the cherries cool and in a bowl I put organic chocolate to melt it with a bain-marie to start passing the cherries cold in the chocolate and then return them to the refrigerator this makes the cherrys not watery
